For the Voodoo Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon hot sauce (adjust to taste)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Cajun seasoning
Instructions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut the potatoes into thin fries, about 1/4 inch thick. Place them in a large bowl and toss with olive oil, paprika, garlic powder, onion powder, cayenne pepper, dried oregano, dried thyme, salt, and pepper until evenly coated.
Spread the seasoned fries in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until crispy and golden brown, flipping halfway through.
While the fries are baking, prepare the Voodoo Sauce. In a small bowl, whisk together mayonnaise, ketchup, hot sauce, Worcestershire sauce, and Cajun seasoning until well combined. Adjust the seasoning to taste.
Once the fries are done, remove them from the oven and sprinkle shredded cheese over the top. Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
